After more than a year undergoing a $34 million renovation and expansion, officials with the city of Edinburg and H-E-B celebrated the grand re-opening of Edinburg’s largest store on Saturday, June 20, 2026.
After more than a year of work, a massive, $34 million renovation and expansion project at an H-E-B store in one of South Texas’ fastest-growing cities is now complete.
Shoppers in Edinburg, in the Rio Grande Valley, have a lot to look forward to at the completely overhauled H-E-B located at 2700 W. Freddy Gonzalez Dr., Edinburg, TX 78539, where city leaders and H-E-B officials celebrated the store’s grand re-opening on Saturday, June 20.

The atmosphere was festive, with an oversized motorized H-E-B shopping cart parked outside and a mariachi troupe serenading shoppers inside. The first 100 customers through the door were given limited-edition commemorative shopping bags, according to the Edinburg Chamber of Commerce. And everywhere were free samples galore. Topping it all off was the official ribbon-cutting, punctuated by colorful confetti raining down on attendees.

A sign alerts shoppers at the H-E-B located at the corner of Freddy Gonzalez Drive and McColl Road in Edinburg that one of the store’s entrances was closed off for renovations in November 2025. On June 20, 2026, officials celebrated the store’s grand re-opening.

The renovation of the nearly 30-year-old store was no small touch-up of paint and finishes. Instead, H-E-B invested nearly $34 million in a ground-up overhaul of the Edinburg store’s interior and exterior. Outside, H-E-B repaved the parking lot and implemented a new traffic pattern, moving H-E-B Curbside parking to the west side of the store. The west side was also the site of an expansion that grew the store’s footprint to a total of nearly 110,000 square feet. The new Curbside parking area lies along a newly expanded space dedicated entirely to Curbside operations, including a curbside-only entrance to the store.
On the north wall of the store, H-E-B reconfigured the store’s entrances — cutting them down from three to two and installing an all-new outdoor garden area with a wide assortment of live plants, ceramic planters and premium potting mixes. Though it’s not a full-scale H-E-B Texas Backyard nursery, the outdoor garden area does carry a variety of Texas Roots-branded plants.

Inside, the Edinburg H-E-B boasts an all-new meat market, seafood counter, deli and expanded produce department. The western wall of the produce department contains the pass-through that houses the new Curbside staging and delivery area. Other improvements include an expanded flower shop, a soup station with several tureens of self-serve hot soup, additional cash registers, and a reconfigured store aisle layout that brings frozen foods to the front of the store.
The larger footprint has also allowed the Edinburg H-E-B to expand its product offerings, including self-serve dried fruit and nut canisters, and a whole host of new international foods and cooking ingredients.
