Edinburg EDC Welcomes Six New Restaurants

Summer is almost over, but there are plenty of good things coming to Edinburg this fall, especially if food is your forte. The Edinburg EDC is proud to welcome six new restaurants to the city. Whether you’re in the mood for steak, salad, donuts or tasty fish tacos, you’ll find a wide selection to choose from when you visit one these new Edinburg hotspots.

Shipley Donuts

Serving up donuts since the 1930s, Shipley Donuts is one of Edinburg’s latest eateries, and a delicious one at that.  Located on University Dr., Shipley’s Donuts offers a range of baked goods to spice up your morning. Gather up the kids for a special Saturday breakfast, or make a quick stop on the way to work to become the office hero for the day.

La Pesca II

La Pesca II, the follow-up to an Edinburg favorite has just opened, and is already making a splash among the lunch crowd. Located in the Cornerstone Plaza, the new location boasts a full lunch and dinner menu, featuring specialties like grilled fish tacos and Caldo de Mariscos, and a full bar with daily drink specials and Happy Hour.

“Our second location kinda happened on accident. It being located in Edinburg was one of the things that made me decide to do it. The city of Edinburg is pro-business and very easy to work with,” said Markus Villarreal, owner of La Pesca restaurants.

Bob’s Steak & Chop House

Bob’s Steak & Chop House, a Dallas-based restaurant chain, offers some of the most decadent dining in the Rio Grande Valley. Here, you’ll find exceptional service and delicious food prepared by Executive Chef Fernando Perez, who’s been part of the Bob’s family for 13 years. The newest addition to the Shoppes at Rio Grande Valley, this upscale restaurant is home to savory steaks, and an impressive wine collection sure to delight those hoping to unwind.

Jason’s Deli

When it’s a healthy meal you crave, Jason’s Deli has got you covered. With locations all over the RGV, Jason’s Deli is finally coming to Edinburg, and will be located right across UTRGV. From soup to salad, sandwiches to paninis, Jason’s Deli is sure to attract a crowd at its October 2 opening.

Raising Cane’s, Golden Chick

If you’re a fan of chicken, you’ll find something to look forward to in two new restaurants: Raising Cane’s and Golden Chick. Centrally located, the two restaurants offer a variety of chicken-centered meals. Raising Cane’s is home to world-famous chicken tenders, while Golden Chick is a fast-food chain specializing in fried & roasted chicken, catfish & Southern-style sides. There will be something for everyone in the family when you visit either of these two quick-dining restaurants.
